I have not forgotten about you, LJ
I feel like winter is ending soon, which is a great feeling, like when you start recovering from the flu.

I'm really looking forward to going back to the US, I have this list of things I'm going to do or buy when I go there and it constantly gets updated. Do not take things like Netflix, thrift stores, or neighborhood libraries for granted!

When I lived in Houston I was about 90-95% vegan. It got to a point where it was pretty much effortless, and I didn't feel like I was missing out. Now it's a totally different story. Claudio and his mom fill the kitchen with all sorts of tempting foods. There is no vegan ice cream, no boxed Indian food for when I'm too lazy/tired to cook, not even premade tomato soup! I guess I should suck it up and put more effort into it, but ugh, effort.

1. Write to Edwin
2. Write to Xtreme video game magazine (OMG they replied telling me their last issue was their LAST :,( )
3. Sew my jeans
4. Write to NEN/SC
5. Write review for Taj Mahal and submit to happycow.net (I don't think they'll accept it since it's not 100% vegetarian)
6. Call Acer and try to get a new laptop battery (Waited too long and the warranty expired :| )
7. Review first 30 lessons of Japanese mp3s.
8. Post favorite Forensic Files episodes in a facebook note (Wow that took a REALLY long time. I'll probably post under an LJ cut simply because it was so much work.)
9. Finish typing up my dreams from the past week or 2 and upload to website.
10. Look up ticket prices to Tokyo. (Ugh wtf why is it cheaper to fly out from London or even Vigo than from the US West coast? I might change my tentative plans)

I'm thinking early April for Houston but nothing's set. I have Continental credit that I need to use up before July. Do you think you'll go back to Houston this spring?

Tokyo I don't know, it's something I'm thinking about. I'd like to go with Claudio but he's probably going to be starting a electricity class in March (he signed up he's just waiting to see if he gets in.)
German's friend is living there (I know him too) and I'd love to meet up with him, but he's not sure how much longer he can stay in the country. Ideally I'd like to go while he's still there and before I get tied down to a job here.

Probably in Mar or Apr, yeah. No more specific plans than that, though... Whoever makes plans first, let's tell the other?

Electricity class?

Sure :)

The electricity class is kind of a continuation of the 2 classes he was taking prior.

so this recipe isn't vegan but could probably be made so, but it is the best. you should try it.

Ingredients
1/2 cup unsalted butter (1 stick)
1/2 medium onion, diced
2 (14 1/2 ounce) cans diced tomatoes
1 tsp salt
1/2 tsp cracked black pepper
1/4 tsp baking soda
1/2 tsp dried thyme
1 cup fresh orange juice
1/2 cup heavy cream

Directions
In a saucepan melt butter, add onion and saute until translucent. Add tomatoes, salt, pepper, baking soda and thyme. Bring to a boil, reduce heat and simmer uncovered about 15 minutes or until slightly thickened.
Puree in a food processor or blender; strain through a sieve or food mill. Return to saucepan and stir in orange juice. At this point, the soup can be refrigerated until ready to serve.
At serving time, add the whipping cream and heat gently, stirring constantly, bringing to a simmer and adjust seasonings if necessary.
Extra cream may be drizzled on top of the soup immediately before serving for a decorative effect.

Hmm that sounds good.
I'm pretty sure they don't sell cans of diced tomatoes here so I'll have to dice them myself... how many tomatoes do you think that would be? 4 big ones?
Also no vegan cream. Maybe the soup won't come out good without it? I can add a little soymilk.
